Pasta is one of the most common ingredients in many traditional Greek recipes. Greek square noodles “hylopites”, orzo “kritharaki”, caseresse “striftadia” are some of the pasta that can be found in many famous Greek dishes. Traditional Greek dishes like “yiouvetsi” (meat with orzo cooked in the oven), “kokinisto” (meat in tomato sauce with pasta), “kokoras me hylopites” (chicken with square noodles). Also, a type of pasta very common in the Greek cuisine is frumenty “trahanas”. Frumenty is a basic ingredient for Greek soups and a very common dish during winter.
Casarecce or Striftadia are tasty and go well with the most type of sauces.

Casarecce with vegetable sauce
Chop in small cubes zucchini, eggplant, colored peppers, chop parsley and garlic and fry all together in a saucepan with some extra virgin olive oil.
When vegetables are cooked, add the boiled and drained pasta. Then add some cream cheese or grated feta cheese and stir for 1 minute.
Serve with freshly ground pepper on top.
Hylopites or hilopites is a Greek egg pasta in the form of small squares.
